How can I set-up posts to be randomly scheduled rather than publishing at the same time?  I've attempted to use the "Post date adjustment range" setting, however, the posts are not shown as " - Scheduled" under the listing of all posts.  

Does this feature simply randomize the shown published date rather than actually establishing a random schedule for posts to be published?

Thanks for your help.

This option randomizes the post dates. E.g. if the post will be added with a future date, it will be marked as scheduled and won't be visible at your site till that date.
