Is there a way to expand the time in the syndicator log? My log only seems to return the most recent feed pull, and ideally, I would want a longer list.

Only the last attempt is logged, because even such a report may contain information about several feeds processed by the plugin at once. Since all this information is stored in the WP database, you should not let it grow uncontrollably.
